Glad My Garden Takes Care of Itself

Wow-the end of the school year is so hectic!   I barely had time to visit our garden this week.  It seems that every afternoon or evening there was an event for one of our kids.    I'm so glad the garden takes care of itself!  I spent maybe five minutes harvesting some herbs, string beans, and the last beet.  That was all the gardening time I had.  While I was busy running around with the kids, the zucchini nearly doubled in size.  Soon, I'll have to trim off a few of its giant leaves so it doesn't shade the basil and herbs.

The veggies on the right side of the garden, which I planted three weeks ago, also grew a ton!  The corn is nearly two feet tall already.

Needless to say, I didn't spend a whole lot of time cooking.  I did manage to make a few simple things.  One night I made Brined Roast Chicken with Wine Jus (www.williams-sonoma.com).  I didn't follow the recipe exactly.  Since I didn't have carrots, celery or onions, I just stuffed the bird with rosemary, thyme, green onions, chives and flat-leaf parsley sprigs.  My daughter said it was the best chicken she'd ever had.  I also made a Snow Pea and Green Bean Salad as well as Beets in Orange Sauce.  Both recipes came from www.epicurious.com.  Hopefully, this coming week will be less crazy and I'll have a bit more time to garden and cook.
