Three Months

Our Oasis garden is now three months old. Every day there are veggies just waiting to be picked. It's so much fun to see what's ready to harvest for dinner each evening.
The snow peas are about 8 feet high! I have to harvest them from the back of the garden, while standing on the slope. Finding the pea pods is sometimes like a scavenger hunt. They blend right in and you have to look closely to see them.
Every time we harvest something (unless we eat it right in the garden), we bring it inside and weigh it on our kitchen scale. So far, we've harvested 16 varieties of produce that weighed a total of 25 pounds. That figure should really shoot up over the summer months. I plan to post the weight each month from this point forward.

With all those fabulous fresh vegetables, my family had to practically drag me to go out to dinner!
Now that it's getting warmer, I adjusted the timer to water the garden 3 times per day for three minutes each time. I also sprinkled more fertilizer along the hose line. Each time the garden is watered, the fertilizer will gradually sink in. Fortunately, I haven't seen any bugs, slugs or snails recently, but I'm sure they'll be back eventually--and I'll be ready for them.
This week, a couple of our favorite dishes were: Snow Peas With Toasted Almonds (www.epicurious.com) and Beet Greens and Honey Walnuts (www.farmfreshtoyou.com). It took me several years before trying beet greens--I used to cook the beets and throw the rest in the trash. I had no idea what I was missing! Now, I look forward to enjoying the greens as much as the beets. We also made spinach and basil pizza. I bought pre-made crusts and covered them with mozzarella and goat cheese. Then I placed spinach and basil leaves on top and brushed them lightly with olive oil. What an easy and tasty meal!
